ABOUT Texas-style pulled Barbeque chicken Burgers with chilled, crunchy Coleslaw! RECIPE

Texas in the United states, is famous for it's divine Barbeque sauce, succulent wings, 'melt-in-the-mouth' Brisket and insanely delicious burgers!! A "pulled pork" burger or a pulled barbeque chicken burger, which consists of slow-cooked, shredded filling instead of a patty is a special favorite among foodies, who travel far and wide just to get one taste of this spicy, signature fast food! Personally, I too am a fan of pulled meat burgers and sloppy joes, as compared to the burgers containing large patty inside of them. They are too large to bite into and I just end up making a mess of my burger or sandwich if it has a huge patty inside of it. Also, being a huge fan of the barbeque sauce in all things edible, this particular burger is one of my ultimate favorite ones. You can use store-bought barbeque sauce to make things easier but I personally love my homemade spicy, tangy barbeque sauce to use in my burgers. If it wasn't enough, topping it up with crunchy coleslaw just seals the deal in making this burger one of the best you will ever eat in your life. Try my version of a Texan classic my friends! It is perfect for the ongoing football season and just so so delicious!

Ingredients Serving: 2

  1. For the Coleslaw-
  2. 1/2 cup Funfoods burger mayonnaise
  3. 1 tsp Dijon Mustard
  4. 1 tsp Apple Cider Vinegar
  5. 1 large carrot, shredded
  6. 1 cup cabbage, shredded
  7. 1 shallot, finely chopped
  8. Salt to taste
  9. For the home-made barbeque sauce-
  10. 1 small onion, finely chopped
  11. 2 Cloves of Garlic, finely chopped
  12. 2 tbsn olive oil
  13. 1 cup tomato ketchup
  14. 1 tbsn Apple cider vinegar
  15. 1 tbsn honey or maple syrup
  16. 3-4 tbsn brown sugar
  17. 2 tsp soya sauce
  18. 1 tsp chilly powder
  19. Salt & Pepper to taste
  20. Also needed:
  21. 2 breasts of chicken
  22. 2 Burger buns
  23. 1 tsp garlic powder
  24. 1 tsp onion powder
  25. 1 tsp chilly powder
  26. 1 tbsn olive oil
  27. 2 tsp butter

Instructions

  1. In a shallow bowl, place your chicken breasts. Throw in the garlic powder, onion powder, chilly powder and a little salt. Rub with your hands till the chicken is fully and uniformly covered.
  2. Cover with a cling-film and keep your chicken to chill in the refrigerator for one hour.
  3. While your chicken is resting, prepare your crunchy coleslaw! In a large bowl, combine all the mentioned ingredients under the given Coleslaw list and mix well together. Season as per taste and keep to chill in the refrigerator.
  4. To make your spicy barbeque sauce, heat the oil in a pan.
  5. Add your minced garlic and chopped shallots to the hot oil and saute for a couple of minutes, till he onions turn a bit translucent.
  6. Add all the remaining ingredients mentioned under the sauce list and mix well. Simmer for around 15 minutes on low heat. Season to taste and switch off the gas to let your sauce cool a bit. Set aside.
  7. After one hour, take out the chicken breasts from the refrigerator. It's time to cook them!
  8. In a frying pan, heat the oil.
  9. Place your chicken breasts on hot oil and let it sizzle for full one minute on high heat. This will give your chicken a beautiful sear!
  10. Then, turn both the chicken breasts to the other side and turn the heat to low. Cover and let the chicken cook for full ten minutes, without touching the pan in between.
  11. After that, switch off the heat and let the chicken sit inside hot pan for another five minutes. This is a fool proof method of cooking the chicken breasts perfectly. Transfer to a plate.
  12. Now take two forks and using them,tear your cooked chicken breasts to shreds. Transfer back to pan and switch on the gas to low.
  13. Pour over your home-made barbeque sauce generously on the shredded chicken and mix well. Simmer gently on low heat for 5-6 minutes. Switch off the gas. Filling for your burger is ready!
  14. Time to assemble your magical burger! Slice the buns in two parts each, neatly.
  15. In a little butter, toast your burger buns till they are golden and crispy.
  16. On the bottom part of each burger, ladle generous and heaped amounts of succulent barbeque chicken filling.
  17. Now, top the filling with that delicious, crunchy and chilled coleslaw that we had prepared earlier.
  18. Cover the burgers with their top halves and stick a cocktail stick in it to hold it all together.
  19. Serve immediately with ketchup, mayonnaise and french fries!! Enjoy!
