How to make Mumbai Special - Tawa Pulao

  1. Boil the peas and carrot with a little salt and keep it aside.
  2. Heat the oil and butter in a pan on medium heat. Once the oil is hot, add in the cumin seeds and let them sizzle a bit.
  3. Add the finely chopped onions and saute until they turn light brown. Put in ginger-garlic paste and saute for 2 minutes. Add green chilies and saute again for a minute.
  4. Add the finely chopped tomatoes and green pepper. Mix well and add 1/4 cup of water, so that the tomatoes cook faster.
  5. Put in the turmeric powder, red chili powder and pav bhaji masala. Mix it well together. Let it cook till the tomatoes are almost mushy and the oil starts leave the sides of the pan.
  6. Add the cooked peas and carrots. Mix and cook for 2 minutes. Put in the cooked basmati rice.
  7. Mix everything very gently without breaking the rice grains. Cook for another 2-3 minutes until everything gets blended well. Finally squeeze some lemon juice, mix and it is ready to serve.
  8. Garnish with finely chopped coriander leaves and serve hot!

My Tip:

1. Accompany Tawa Pulao with some raita, papad and you would be reaching heaven on earth ! 2. It can be made from leftover rice at home. 3. To serve it restaurant style. Remove the pulao in a serving bowl, add a dollop of butter on top and lemon wedges on side. 4. You can also enhance the flavor of this Tawa Pulao by adding some fried cottage cheese (Paneer) on it. 5. Leftovers stays good for 2 days in airtight container in refrigerator.
