ABOUT Katori chaat RECIPE

A delightful flaky basket filled with potatoes, matar and tangy chutneys.

Ingredients Serving: 6

  1. For the basket :
  2. Flour - 1.25 cups
  3. Butter - 1/2 cup
  4. Ice water - 3 tbsp
  5. Salt
  6. To assemble:
  7. Mashed potatoes - 2
  8. 1/2 cup cooked white batana/ peas
  9. 1/4 cup curd
  10. 1 onion, finely chopped
  11. Handful of coriander leaves, finely chopped
  12. For the imli chutney:
  13. 1 tbsp tamarind
  14. 1 tsp sugar
  15. 1/4 cup water
  16. 1 tsp roasted jeera powder
  17. For the green chutney:
  18. Bunch of coriander leaves
  19. Bunch of mint leaves
  20. 2 cloves of garlic
  21. 1 tsp salt
  22. 1/2 tsp sugar
  23. 1 tsp tamarind
  24. Water as required

Instructions

  1. Pulsate the cold butter in the mixer then add the flour and salt, then pulsate it twice. Next, pour in the cold water and pulsate again. Pour this mixture onto a cling film and keep the dough in the refrigerator for 10 minutes.
  2. Then roll out the dough, cut roundels and place them into muffin tray cups, blind bake them using baking beans or rice, in a preheated oven for 30 minutes at 180 degree celsius.
  3. To assemble, mix some salt to the mashed potatoes. Take each of the baked cups, pit a little potato mash, then put some cooked white batana.
  4. Whisk the curd with a little salt and sugar, water. Pour this mixture on top of the cooked white batana, then place some tamarind chutney and green chutney, top it with chopped corriander leaves and onions.
  5. To make the green chutney, blend all the ingredients mentioned, in a mixer grinder.
  6. To prepare the imli chutney, boil the soaked tamarind water and the pulp with sugar, little salt and cook till the desired consistency is acquired. Finally add some roasted jeera powder. Cool and store.
  7. Serve the katori chat instantly to enjoy!
