ABOUT Shahi Murmure Mixture RECIPE

Khatta Meetha Shahi Murmure Namkeen with very little oil. This namkeen mixture is very light and healthy as it has goodness of dry nuts. A perfect accompaniment with evening tea or coffee.

Ingredients Serving: 4

  1. 250 grams Murmura/Puffed rice 
  2. 1/2 cup almonds
  3. 1/2 cup cashews
  4. 1/2 cup pea nuts
  5. 1 green chilli finely chopped
  6. 2 sprigs curry leaves
  7. 1/2 teaspoon fennel seeds
  8. 1 teaspoon jeera/cumin seeds
  9. 1 teaspoon rai/mustard seeds
  10. 1/2 teaspoon white til /sesame seeds
  11. 1/2 teaspoon Red  chilli powder or to taste
  12. 1 teaspoon chaat masala
  13. 1 teaspoon sugar
  14. 1 teaspoon oil
  15. 1/2 teaspoon salt or to taste

Instructions

  1. Clean the murmura and dry roast in a big pan on low flame for 5 minutes until it is crisp. Remove it to a wide dry bowl.
  2. Heat 1 teaspoon oil in a non-stick pan and shallow fry the almonds, cashews and peanuts on a very low flame until golden in colour and crisp.
  3. Now in the same pan crackle mustard seeds, cumin, sesame seeds and fennel seeds.
  4. Add slit green chillies and curry leaves and fry until they are crisp for 10 seconds.
  5. Now add the roasted murmure and all dry powdered spices, salt and sugar and mix well.
  6. Add roasted almonds, cashews and peanuts and stir well upside down for a couple of minutes so that the masala coats well.
  7. Immediately switch off the flame.
  8. Let it cool down completely.
  9. Serve the delicious and healthy shahi murmure mixture with hot tea or coffee.
  10. Or Store in an air-tight container.It stays good for up to a month.
