Ingredients to make NUVVULU MASALA - vegetable gravy in sesame seed sauce

  • FOR THE MASALA:
  • Sesame Seeds (nuvvulu) - 1 cup
  • Red chillies - 5
  • Jeera - 1 sp
  • Onions - 2
  • VEGETABLES:
  • Corn - 1
  • Potatoes - 2
  • Ridge gourd (beerakai) - 1
  • Brinjal - 1
  • Flat beans (chikudikai) - 5
  • Drumstick - 1
  • Dondakai (toondri) - 5
  • SEASONING:
  • mustard, jeera, curry leaves and red chillies

How to make NUVVULU MASALA - vegetable gravy in sesame seed sauce

  1. For the sesame Paste: In a big mixer jar, blend finely sesame seeds, red chilies and 2 tsp of jeera. Add diced onions and grind to make a very fine paste of creamy consistency by adding water as needed.
  2. Cut Corn into circles, Dondakai into halves length wise. Cut other vegetables into big chunks.
  3. Heat a big cooking pot. Add 2 sp of oil and make seasoning with mustard, jeera, curry leaves and red chillies.
  4. Add water, diced potato, corn slices, drumstick chunks, 2 tsp of salt and boil over 10 minutes till almost cooked. Add the remaining vegetable cubes and boil over 10 minutes till cooked.
  5. Add the sesame paste and required water for consistency and cook over low flame.
  6. Serve hot with rice.

My Tip:

Grinding the paste to smooth consistency is a must. Otherwise, it will look curdled. The potatoes, corn and brinjal neutralize the raw vegetable flavors. Also popular with kids. In addition, coconut and jackfruit seeds can also be added. Cooking can also be done in pressure cooker alternatively to reduce cooking time.
