Ingredients to make NUVVULU VEPUDU - A sesame veggie roast delight

  • FOR THE MASALA:
  • Sesame Seeds (nuvvulu) - 1 /2 cup
  • onion - 1
  • Red Chilies - 3
  • Jeera - 1 tsp
  • Rice Flour - 4 sp
  • Salt to taste
  • VEGETABLES:
  • Drum Stick
  • Cauliflower florets - a portion
  • Potatoes - 2
  • Potals (Optional)
  • Oil : 4 - 6 sp

How to make NUVVULU VEPUDU - A sesame veggie roast delight

  1. Clean and cut the vegetables into big chunks - drumstick length wise, brinjals in circles, potatoes wedges or circles and cauliflower as florets.
  2. Boil the vegetables in hot water with little salt. Add brinjal towards the end. Strain the water in a colander.
  3. Make a fine powder of sesame seeds, red chillies and jeera. Add coarsely cut onions and rice flour and make a very fine paste.
  4. Heat a big flat tawa in low flame and grease it with 3 sp of oil.
  5. In a mixing bowl, transfer the sesame masala. Check for consistency and add water or rice flour if required.
  6. Dip each veggie in the mix and put it on the tawa.
  7. Distribute the masala consumption depending on the vegetable chunks left and place all of them on tawa. sprinkle oil drops on edges.
  8. In between, with a sharp shovel spatula (atlakada), slightly displace the chunk from the tawa to avoid sticking.
  9. Flip over one veggie and check if the roasting is done. It should turn light brownish. Flip all the veggies and sprinkle some more oil as needed to avoid sticking.
My Tip: a) For the first time, try with little bit of one or 2 veggies. b) Instead of veggies, cabbage can be cut in thin lengths, boiled and added to the masala. Like bhujia, it can be loosely spread on the tawa.. In chunks, it needs to be turned over. A unique cabbage roast...
