Ingredients to make MENTHI VANKAYA KOORA - methi spiced brinjal fry

  • METHI GUNDA SPICE INGREDIENTS
  • Chanadal (senaga pappu) - 1 big glass
  • Jeera - 1/6 glass
  • Red chilies - 8
  • Menthi seeds - 1 tsp
  • Sesame seeds (nuvvulu) - 2 tsp
  • Brinjal - 4 medium size
  • curry leaves
  • 4 spoon methi gunda spice
  • Oil - 4 sp
  • Salt to taste

How to make MENTHI VANKAYA KOORA - methi spiced brinjal fry

  1. METHI GUNDA PREPARATION:
  2. Roast all the ingredients seperately in a kadai. After cooling, grind to a fine powder. Store in air tight container.
  3. CURRY PREPARATION:
  4. In case of baby brinjals, make 4 slits like in guttu vankaya koora. Otherwise, cut into medium sized chunks.
  5. In a nonstick pan, add 4 sp of oil. Add some curry leaves and allow it to fry. Add the brinjal chunks, salt and partially close with a lid. Allow it to roast for 10 minutes.
  6. Add little water and allow the brinjals to get completely cooked. Saute occasionally and add water if needed.
  7. When the water is almost reduced, add 4 tsp or Menthi Gunda powder and stir. Close with a lid and stir occasionally. Cook till water is completely reduced and the powder is well cooked.
My Tip: In a similar manner, halved and slit potals (parval) can be prepared. This masala can also be added towards end for thickening in other preparations like cut beans curry, ridge gourd stew.
