ABOUT Spicy Chole Croquettes Burger with Veg Salad RECIPE

Croquettes is originated in France, is a small bread crumbed fried food roll containing, usually as main ingredients, mashed potatoes or ground meat (veal, beef, chicken, or turkey). The croquette is usually shaped into a cylinder, disk, or oval shape, and then deep-fried. The croquette (from the French croquer, "to crunch") gained worldwide popularity, both as a delicacy and as a fast food. Chole is the name for the larger and lighter coloured chickpea commonly found in the West. These are known as kabuli chana. In this recipe I have prepared spicy chole Croquettes and stuffed them in the burger served with vegetable salad and burger Mayo.

Ingredients Serving: 4

  1. Salad - Finely chopped tomato– ¾ cup (remove seeds and pulp)
  2. Finely chopped cucumber – ½ cup (remove seeds and pulp)
  3. Finely chopped onion- ¼ cup
  4. Mayonnaise – 1 ½ tbsp.
  5. Thick fresh curd – 1 tbsp.
  6. Lemon juice – 1tsp
  7. Honey – 1 tsp
  8. Freshly ground Black paper – 1tsp
  9. Red chilli flakes – ½ tsp
  10. Salt to taste.
  11. For Croquettes - Boiled Chickpeas or kabuli chana – ¾ cup
  12. Boiled Potatoes – 1 medium size. Grated
  13. Cumin seeds – ½ tsp
  14. Onion Medium– 1/2 finely chopped
  15. Tomato finely chopped – 1 medium
  16. Asafoetida – ¼ tsp
  17. Coriander powder – ½ tsp
  18. Cumin powder – ½ tsp
  19. Red chilli powder – 1 tsp
  20. Chole garam masala – 1 tsp
  21. Finely chopped coriander – ¼ cup
  22. Lemon Juice –1 tsp
  23. Salt to taste
  24. Bread crumbs – 1 ½ tbsp
  25. Rice Flour – ½ tbsp
  26. Oil – 2cups for frying
  27. Green paste – Green chilli – 2-3 finely chopped - Hot
  28. Garlic – 3-4 sliced
  29. Ginger – ¼ inch
  30. For Slurry - Flour – 2-3 tbsp
  31. Rice Flour – 2 tbsp
  32. Salt to taste
  33. Water – as required for preparing slurry + 1-2 tbsp for chole
  34. For the coating - Crushed Dry Vermicelli – 1cup
  35. Other ingredients – for serving - Tomato Ketchup or Any dip
  36. For burgers – 4 burgers
  37. Butter – 2-3tbsp
  38. Cheese slice – 2-3
  39. Veg Mayonnaise – 3 tbsp
  40. Lettuce leaves – 2-3
  41. Other ingredients – for serving - Tomato Ketchup, Slaw or salad

Instructions

  1. For Croquettes – Blend green chilli, garlic cloves and ginger into coarse paste.
  2. In a nonstick pan, heat oil. Add cumin seeds. Let it splutter. Add asafoetida. Stir it.
  3. Add finely chopped onion and salt. Cook till translucent.
  4. Add green paste. Cook till raw aroma goes away.
  5. Add finely chopped tomato and finely chopped coriander leaves. Cook on low flame until they soften and become mushy.
  6. Add garam masala, coriander powder, cumin powder, Red chilli powder. Cook for few seconds
  7. Add boiled chole. Mix well till it combined well.
  8. Add grated potato. Mix well. Sauté for few seconds.
  9. Add lemon juice. Mix well. Switch off the flame.
  10. Mash the mixture well using spatula or masher. Add breadcrumbs. Mix well.
  11. For Slurry - In a bowl, take rice flour, salt. Add water slowly. Mix it until form a thick slurry.
  12. Spread crushed vermicelli in a plate.
  13. Divide the mixture equally, stuff grated processed cheese in the center and shape into 3- 3 ½ inch long croquettes.
  14. Dip them in prepared batter and Roll in crushed dry vermicelli.
  15. Heat oil in a kadai or wok, Fry prepared croquettes on medium low flame until crispy and golden brown.
  16. For Salad - In bowl mix finely chopped vegetables.
  17. In another bowl take curd, mayonnaise, red chilli flakes, ground black peppercorns, honey, salt. mix well until it combined. Dressing is ready.
  18. Pour over chopped vegetables and toss well.
  19. Assembling – Cut the burger buns horizontally into two. Apply butter on insides of each half. Toast them on nonstick pan
  20. Spread some burger veg mayonnaise evenly on each sliced burger. Keep lettuce leaf and 2-3 prepared croquettes.
  21. Top it with Cheese slice.
  22. Spread 2-3 tbsp. prepared salad. Top it with lettuce leaf. Cover with another buttered burger slice.
  23. Serve with tomato ketch up or any dip.
