Thotakura Vepudu

Ingredients to make Thotakura Vepudu

  • 4 bunches fresh amaranth leaves chopped
  • 1 large onion, finely chopped
  • 5 garlic
  • big pinch turmeric pwd
  • salt to taste
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1 tsp split gram dal
  • 3 dry red chillis de-seeded

How to make Thotakura Vepudu

  1. Heat oil, add the garlic, cumin seeds, split gram dal, red chillis and saute for half a minute. Stir for 2-3 seconds.
  2. Add the onions and saute till the onions turn transparent. Add salt and turmeric pwd and saute further for a minute.
  3. Add the amaranth leaves and saute for 20 mts or till done, without lid, on low flame.
  4. Turn off heat and serve hot with rice.
