Ingredients Serving: 4

  1. Boiled potatoes 4 (peeled)
  2. Steamed veggies :
  3. (Carrot 1 cup chopped
  4. Cauliflower 1/2 cup chopped
  5. Green peas 1 cup)
  6. Tomatoes 4 Chopped
  7. Tomato puree 1 cup
  8. Capsicum 1 chopped
  9. Onion 2 chopped
  10. Ginger 2 teaspoon chopped
  11. Garlic 2 teaspoon chopped
  12. Green chillies 3 chopped or to taste
  13. Salt to taste
  14. Sugar 1 tablespoon
  15. Red chili powder 1 teaspoon
  16. Turmeric Powder 1/3 teaspoon
  17. Pav bhaji masala 2 tablespoon
  18. Lemon juice 2 tablespoon
  19. Butter 100 gm
  20. Oil 2 teaspoon
  21. Water 2 cup
  22. Pav 1 pack
  23. For garnishing:
  24. Coriander leaves 2 tablespoon chopped
  25. Chopped onion

Instructions

  1. Add 60 gm butter to pan add some oil also to save butter from burning. Add chopped ginger, garlic and onion. Roast it till it becomes golden brown. Add chopped capsicum fry it for 2 minutes.. Add Chopped tomatoes and cook till masala leaves oil.
  2. Add salt, red chili powder, turmeric powder, and cook for 2 minutes.
  3. Add green chillies and tomato puree.Mash potatoes and all steamed veggies separately. Add mashed veggies to masala and mix well. Roast for 2 minutes.
  4. Now add mashed potatoes and roast for 4 minutes. After this add 2 cups of water. And stir constantly.
  5. Cook for 5 mintues with covered lid. And stir constantly. Till thick gravy is formed. Add pav bhaji masala and 1 tablespoon sugar to adjust the masalas.
  6. Cook for 2 minutes and add coriander leaves , lemon juice. Cook for 2 minutes.
  7. Now heat a tawa and grease it with butter and fry pav on it from both sides. Serve bhaji with crispy pav and chopped onion.
  8. Your pav bhaji is ready.
