Ingredients to make Baigan bhajias/pakode

  • 1 Long Brinjal 250 grams
  • 6-7 soup spoons Besan ,gram flour
  • 1/2 tspn baking powder
  • 1,/2 tspn ginger garlic paste
  • 1 tspn red chilli powder
  • 1tspn cummin corriander powder
  • Salt to taste,manage between marinade and adding inbesan batter
  • 250 Ml oil to deep fry

How to make Baigan bhajias/pakode

  1. TAKE THIS LONG THICK BRINJAL ABOUT 250 GRAMS ,BUT LIGHT
  2. WASH ONCE CUT OUT SLICES ROUND NOT VERY THIN
  3. PUT IN WATER WITH PINCH OF SALT IN WATER TO CLEAR ANY EXTRA DIRT CLUNG
  4. TAKE ABOUT 6-7 SOUP SPOONS OF BESAN/GRAM FLOUR ,GROUND FINE,I USE MADAM BRAND
  5. ADD SALT TO TASTE,1TSPN RED CHILLI POWDER,1TSPN CUMMIN CORRIANDER POWXER,1/2TSPN GINGER GARLIC PASTE
  6. MIX ALL WELL AND WATER TO MAKE SEMI FLOWING BATTER
  7. ADD 1/2 TSPN BAKING POWDER TO THE BATTER AND MIX WELL
  8. TAKE OUT BRINJAL FROM WATER KEEP DRY IN A PLATE ,SPRINKLE SOME SALT ,RED CHILLI POWDER AND SMOTHER
  9. APPLY CHILLI POWDER SIMILARLY TOO
  10. HEAT OIL TO DEEP FRY,AND DIP EACH BRINJAL PIE E IN BATTER AND DROP IN HOT OIL TO FRY
  11. SIMILARLY ADD ALL BRINJAL PIECES ONE BY ONE TO FRY
  12. DEEP FRY THESE WELL ,THEY GO CRISP AND SWELL AS FOR BAKING POWDER ADDED
  13. WHILE FRYING DO TRY LIGHT PRESSING ON THE BRINJAL PAKODA TO MAKE CRISP
  14. YOUR BRINJAL PAKORA WILL RISE WHILE FRYING ,AS USING BAKING POWDER
