ABOUT Luchi Aloor Dum RECIPE

It's a Bengali's favourite festive food so sharing it with all of you. This is a dish made entirely with love.

Ingredients Serving: 2

  1. 2 cups maida
  2. 1 tablespoon Refined Oil
  3. 2 medium sized onions
  4. 2 Tomatoes
  5. 3 medium sized potatoes
  6. 1 teaspoon cumin powder
  7. 1 teaspoon of turmeric power
  8. 1 teaspoon of amchur
  9. A pinch of hing
  10. 1 teaspoon sugar
  11. 1/2 teaspoon garam masala
  12. A thumb long garlic
  13. 1 tsp Whole garam masala
  14. A bunch of Coriander leaves, finely cut

Instructions

  1. Char the potatoes in a seperate pan using turmeric and salt so that it gets a brown outer skin. Keep aside.
  2. Heat the oil in a pan, when its hot throw in the whole garam masala. Once its fragrant, add in the finely chopped onions and a pinch of hing and saute till it gets brown in colour.
  3. Once the onions are translucent add in the finely chopped ginger and garlic and fry it well. Then put in the tomatoes and saute on a medium heat till it gets mushy and looses its raw smell. Then add in the powdered masalas except the garam masala.
  4. Add the sugar and salt with a splash of water to the masala and saute till the raw smell is gone. Then add in the potatoes and cook with the masala. Add a little luke warm water when you feel that it sticks to the pan.
  5. Then pour in a cup of water and salt to taste along with garam masala and cover it with a lid. In 10 minutes your aloo dum will be ready. Garnish it with chopped coriander before serving.
  6. To make the luchi, take the maida in a bowl, add 1 tablespoon of oil and salt to it. Then mix it thoroughly. Add luke warm water and start kneading the dough. (The consistency should be soft but not too soft).
  7. Roll out in small circles and deep fry them to get the soft luchi.
  8. Serve these luchis hot and enjoy it with the aloor dum.
