Cauliflower Stem Curry

Ingredients to make Cauliflower Stem Curry

  • Stems of 1 big size cauliflower
  • 2 big potato
  • 1 medium size brinjal
  • 1 big tomato
  • Panchforon (Bengali five spices) 1/2 teaspoon
  • mustard Paste 2 - 3 tablespoon
  • turmeric powder 1/4 teaspoon
  • chilli powder 1/2 teaspoon
  • cumin powder 1 tablespoon
  • Kashmiri chilli powder (oprional) 1 teaspoon
  • ginger paste 1 teaspoon
  • salt as per taste
  • sugar as per taste
  • Green chillies 4 no
  • mustard Oil 2 tablespoon
  • bay leaf 1
  • 1 cup water
  • coriander leaves 2 tablespoon (for garnishing)

How to make Cauliflower Stem Curry

  1. Take 1 cup of water in a pan add 1 pinch of salt and add the cut stems of the cauliflower and boil for 4 min.
  2. Cut the potatoes like wedges, brinjal in medium sizes and tomato in 4 parts
  3. Heat mustard oil in a kadai and add bay leaf and panchforon
  4. Add potatoes and fry till it's slight golden
  5. Then add boiled stems and fry with the potatoes.
  6. Add ginger paste and tomatoes and cook till the tomatoes gets softened
  7. Add turmeric, cumin,chilli powders, salt, sugar and mustard paste
  8. Add little bit of water and cook till the masalas release oil from the side and cook in ow flame
  9. Then add the brinjal and again a little bit of water and cover it. Let the brinjal gets cooked but not mashed .
  10. In between take the lid and check if it's not sticking or else add little water and cook till the vegetables are done.
  11. Switch of the flame and add sprinkle coriander leaves on top.

My Tip:

You can also use vegetables like radish, pumpkin. Always cook in low flame
