Fresh Strawberry Cheesecake Tart

Ingredients

  • For tart shell-
  • 1 1/2 cups Flour
  • 160 gms Unsalted Butter(chilled and cut into chunks)
  • 2-3 tbsp Ice cold water
  • 2 tbsp Caster sugar
  • Pinch of salt
  • For the filling-
  • 200 gms Cream Cheese
  • 1 cup Cream
  • 2 tbsp Caster sugar
  • 1 tsp Vanilla extract
  • Strawberries- 1 box or as required, hulled and sliced
  • Fresh mint for garnishing

Steps

  1. Combine sugar, salt, cold butter chunks and flour in a food processor and pulse till breadcrumbs form. Sprinkle chilled water sparingly till dough just comes together. Take out from processor and pat together, wrap in cling film and chill.
  2. Preheat oven to 200 deg C. After 15 minutes of chilling, take out dough and roll out into a disk on a lightly floured surface. Place carefully into pie tin, trim the edges.
  3. Freeze for 5 minutes then bake for 15- 20 minutes till lightly golden. Take out and let cool completely.
  4. Make the filling- Take cream cheese in a large bowl and beat till light. Add cream, sugar and vanilla and beat again till smooth and creamy.
  5. To assemble- Spoon out filling into cooled tart shell . Place the strawberries and mint leaves on top. Chill for a few hours and serve.
My Tip: Add some lemon zest to the filling for a different taste!
