  • 1 cup Black rice soaked overnight
  • 100 gms boneless chicken cubes
  • 2+2 tbsps olive oil
  • 1 tbsp butter
  • 2 tbsps parmesan cheese garted
  • 2 fat garlic cloves chopped
  • ½ tsp pepper powder
  • salt to taste
  • Dried basil for seasoning
  • 1 onion sliced
  • water 2 cups

How to make Black Rice Chicken Risotto

  1. HEAT A PAN, ADD 2 TBSPS OLIVE OIL, 2 GARLIC CLOVES CHOPPED AND SAUTE FOR A MIN
  2. ADD 100 GMS BONELESS CHICKEN CUBES, 1/2 TSP PEPPER POWDER, SEASON WITH SALT AND DRIED BASIL
  3. STIR FRY FOR 8-10 MINS TILL GOLDEN AND KEEP ASIDE
  4. HEAT A PAN, ADD 2 TBSPS OLIVE OIL, 1 ONION CHOPPED AND SAUTE TILL ONION TURNS SOFT
  5. ADD 1 CUP OVERNIGHT SOAKED BLACK RICE AND SAUTE FOR 5 MINS STIRRING IT CONTINOUSLY.
  6. SEASON WITH SALT AND ADD 2 CUPS WATER.
  7. COVER THE PAN AND COOK TILL THE RICE IS COOKED AND WATER DRIES UP. ADD MORE WATER IF REQUIRED
  8. ADD THE CHICKEN, 1 TBSP BUTTER, 2 TBSPS GRATED PARMESAN CHEESE
  9. MIX WELL AND TAKE OFF THE HEAT
