Vegetable Fusilli pasta with home-made Bechamel sauce!

ABOUT Vegetable Fusilli pasta with home-made Bechamel sauce! RECIPE

This is the classic way of making a white sauce, using a mixture of butter and flour that the French call a roux. This pasta dish is so easy to whip up on a lazy weekday when you do not feel like cooking something elaborate.

Ingredients Serving: 2

  1. 2 cups Milk
  2. 1 tbsp Butter
  3. 1/4 cup cheddar or mozzarella grated cheese
  4. 2 tbsp all purpose flour
  5. 2 cloves
  6. A quarter of a small onion
  7. 1 bay-leaf
  8. 1 cup fusilli
  9. 2 tbsn olive oil
  10. 1 tsp fresh, chopped garlic
  11. 1 bell pepper, sliced
  12. 1 Onion, sliced
  13. 4-5 mushrooms, chopped
  14. 1 tsp mixed Italian seasoning
  15. Salt & Pepper to taste

Instructions

  1. Start by making the white bechamel sauce. In a sauce-pan, heat your butter. Add all purpose flour to the butter and immediately start whisking it all together with a whisk. Keep the heat on low.
  2. With a whisk, keep whisking continuously on low heat, till the raw aroma of the flour goes away.
  3. Once the color darkens slightly, add half the milk and again, keep whisking till you get rid of all the lumps. Repeat with the rest of the milk. Once you get a smooth, glossy, lump-free sauce, let it simmer away for some time.
  4. At this point, add the onion, bayleaf and cloves to it. You can also repeat the above step with some more milk if the sauce looks too thick for you.
  5. Finally, after around 6-7 minutes, add the cheddar cheese to the sauce, along with salt & pepper to taste. Discard the cloves, bay leaf and onion. Your white bechamel sauce for the pasta is ready!
  6. Now,the pasta. Boil the fusilli pasta according to the instructions on the pack. You can use any pasta of your preference here!
  7. In a wok, take a little olive oil and once it gets hot, add your chopped garlic to it. Once it sizzles, add the sliced onions, bell pepper and mushrooms and saute on medium heat till they get nicely roasted but are still crunchy.
  8. Add the white sauce and mix well. Finally, add the boiled fusilli pasta to the veggies and sauce and let it all cook for about 2-3 minutes more. Also add the Italian seasoning at this point. Adjust the salt & pepper. Enjoy!
