ABOUT Hyderabadi Chicken Khichda... RECIPE

A super healthy one pot meal with rice, broken wheat and lentils. This is a pure bliss when served hot on any given day. This is relished on weekends and get togethers and mostly made on a day to day basis in the month of Ramadan all over the city. Infact this does not need any special reason to make and hence an all time affair in many a homes including mine. A lovely blend of protiens, vitamins and essential carbs, this is for sure a keepsake recipe for every mom. Kids will just love it's melt in mouth texture and will never say no to it. This can be made with both chicken and mutton.

Ingredients Serving: 5

  1. Chicken boneless cubes 700 gm
  2. Raw rice 1 cup
  3. Broken Wheat 1 cup
  4. Bengal gram 1/4th cup (chana dal)
  5. Pigeon pea lentils 1/4th cup (Toor dal)
  6. Red lentils 1/4th cup (masoor dal)
  7. Blackgram 1/4th cup (urad dal)
  8. Yellow lentils 1/4th cup (moong dal)
  9. Ghee 3 tbsp
  10. Oil 1/4th cup
  11. Salt 1 tbsp
  12. Ginger garlic paste 1 tbsp
  13. Cumin powder 1 tbsp
  14. coriander powder 1 tbsp
  15. Turmeric 1/2 tsp
  16. Garam masala 1 tsp
  17. Red chilli powder 2 tbsp
  18. Onions sliced 2 cups
  19. Curd 1 cup
  20. Green chillies chopped 3
  21. Coriander leaves chopped 1/2 cup
  22. Mint leaves chopped 1/2 cup
  23. Ginger juliennes 2 tbsp
  24. Lemon juice 2 tbsp

Instructions

  1. First of all deep fry the onions and set aside.
  2. Soak the rice, broken wheat and lentils overnight.
  3. In a pressure cooker, add soaked rice, broken wheat and lentils along with half a litre of water.
  4. Add salt according to taste.
  5. Pressure cook for 7 whistles.
  6. In a separate cooking pot, heat oil and add ginger garlic paste.
  7. Add chicken cubes to it along with all the spices including the garam masala.
  8. Also add the beaten curd to it.
  9. Saute them all on a low flame and simmer until tender.
  10. It will be done in 25 minutes.
  11. Add this cooked chicken to the pressure cooker with rice and lentil mix.
  12. Add fried onions too. Reserve some for garnishing.
  13. Mix everything well.
  14. Simmer on low flame for a further 10 to 15 minutes.
  15. Add ghee and garnish with coriander and mint leaves.
  16. Also squeeze some lemon juice. Garnish with ginger juliennes and fried onions before serving.
