ABOUT Sambhar rice RECIPE

Combine simple ingredients into one pot for a complete meal that doesn't require extra work. These quick and easy one pot recipes are simple enough for any meal of the day might be brunch/lunch or dinner as well for the busy weekdays, lazy weekends and also special enough for guests. Sambhar rice is a comforting soul food that is rich in nutrients containing lots of vegetables and lentils, making it a perfect meal for any time of the day. Sambhar rice, comparatively is lighter and simpler than Bisibele bath and has intense flavors of Freshly ground masala paste that makes it stand out and no wonder, it is enjoyed by majority of the crowd.

Ingredients Serving: 4

  1. For the masala paste : 1 tsp : Ghee/ Clarified Butter
  2. 2 tbsp : chana dal
  3. 1 tbsp : Urad dal
  4. 1 tbsp : coriander seeds
  5. 1/4 tsp : Fenugreek seeds
  6. 1 tsp : Mustard seeds
  7. 4 nos : Dry red chillies
  8. 1/4 cup : Fresh coconut, Roughly chopped
  9. For the Sambhar Rice : 1 cup : Sona masoori rice
  10. 1/2 cup : Masoor dal/toor dal
  11. 2 cup : mixed vegetables diced
  12. 1/2 cup : Sliced onions
  13. 1 large : Tomato diced
  14. 1 tbsp : Ghee
  15. 1 tbsp : Oil
  16. 1 tsp : Mustard seeds
  17. 1/2 tsp : Cumin seeds
  18. 2 nos : Dry Red chillies
  19. 1 nos : slit green chilli
  20. 1/8 tsp : Asafoetida / Hing
  21. 1/2 tsp : Turmeric
  22. 1/3 cup : Tamarind extract
  23. 1 tbsp : Jaggery
  24. 4 cups : Water
  25. Salt to taste
  26. 2 tbsp : chopped cilantro

Instructions

  1. Preparing the masala paste : Heat a small sauce pan with a teaspoon of ghee. Once hot add in the chana dal, urad dal and Fenugreek seeds.
  2. Fry them on low to medium heat until golden and aromatic. Later stir in the coriander and Mustard seeds. Saute them for a minute or so until fragrant.
  3. Lastly stir in the red chillies and coconut pieces. Saute well, transfer on to a plate and cool them to room temperature.
  4. Add enough water and grind into a thick paste. Set aside ready until required.
  5. Prepare the rice : Wash and soak the rice and dal in enough water for 20 minutes.
  6. Drain the water and add it to a pressure pan or cooker along with 2 cups of chopped vegetables like carrots,potato,beans,bottle gourd etc, Turmeric and 4 cups of water.
  7. Cook them for 4 whistles until soft but not mushy. Turn off , allow the pressure to get released by itself.
  8. Finally the Sambhar rice : Heat a deep non stick pan or kadai with a tablespoon of oil and ghee. Once hot add the Mustard, Cumin, curry leaves(if available) , asoefetida and dry red chillies. Saute them until aromatic.
  9. Scoop out a tablespoon of the tempering and reserve for later. Next stir in the Sliced onions,slit green chilli. Fry until onions turn pinkish in color.
  10. Add the chopped tomatoes and fry for a minute or two.
  11. Add in the Tamarind extract and bring it to a boil. Stir in the salt, jaggery and ground masala paste.
  12. Bring this to a gentle boil and mix in the boiled rice and vegetables
  13. Mix well and cook covered for few minutes until all the flavors blend in well.
  14. Sprinkle with chopped cilantro. Season with reserved tempering and serve hot with papad,boondi and yogurt.
