Ingredients to make Seyal eggs

  • 2 eggs
  • 2 tbsp oil
  • 3 onions
  • 1 tomato
  • 5-6 garlic gloves
  • 1-2 green chillies
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • salt, to taste
  • coriander leaves, for garnish

How to make Seyal eggs

  1. Heat oil in a wok and add chopped onions and garlic.
  2. Sauté till translucent and then add chopped tomatoes and green chillies.
  3. Sauté for 1-2 mins.
  4. Add salt and all dry spices and mix well.
  5. Add little water and let it come to boil.
  6. Break eggs and put them on top of the whole masala.
  7. Sprinkle salt and pepper powder on the eggs.
  8. Cover and cook for 2-3 mins till the egg yolks get cooked, check with a toothpick or knife if it comes out clean.
  9. Add garam masala powder and coriander leaves and serve hot with roti.
