Goli Baje/Mangalore Bajji or Mangalore Bonda ,Its soft from inside and little crispy from outside,they are very delicious in taste as well addictive snacks too.

Ingredients Serving: 4

  1. Maida/APF - 1 Cup
  2. Besan /Gram Flour -1/4 Cup
  3. Rice Flour - 1 Tbspn
  4. Sour curd - 1 cup
  5. Salt - to taste
  6. Baking Soda -a Pinch
  7. Hing -1/4 Tspn
  8. Green chilli -2 Finely chopped
  9. Finely chopped Ginger -1/2 tspn
  10. Finely chopped Curry leaves - 4 tspn
  11. Finely chopped coriander leaves -1 Tbspn
  12. Oil - for frying

Instructions

  1. In a bowl add Maida,gram flour,rice flour,salt and sour curd.Mix it well.The batter should be rest atleast 3 hrs.So that the batter is nicely aerated.
  2. After 3 hrs add Green chilli,ginger,curry leaves,coriander leaves,hing and baking soda,Giva a nice mix.
  3. Heat oil in a kadai,take small balls of dough and gently drop it in the oil.Fry the bondas till it becomes crisp in medium flame on both sides.
  4. Remove it and place it in a tissue paper to drain the excess oil
  5. Serve it hot with coconut chutney,sambar or ketchup.
