Ingredients to make Goli Baje / Mangalore Bonda

  • Maida/APF - 1 Cup
  • Besan /Gram Flour -1/4 Cup
  • Rice Flour - 1 Tbspn
  • Sour curd - 1 cup
  • Salt - to taste
  • Baking Soda -a Pinch
  • Hing -1/4 Tspn
  • Green chilli -2 Finely chopped
  • Finely chopped Ginger -1/2 tspn
  • Finely chopped Curry leaves - 4 tspn
  • Finely chopped coriander leaves -1 Tbspn
  • Oil - for frying

How to make Goli Baje / Mangalore Bonda

  1. In a bowl add Maida,gram flour,rice flour,salt and sour curd.Mix it well.The batter should be rest atleast 3 hrs.So that the batter is nicely aerated.
  2. After 3 hrs add Green chilli,ginger,curry leaves,coriander leaves,hing and baking soda,Giva a nice mix.
  3. Heat oil in a kadai,take small balls of dough and gently drop it in the oil.Fry the bondas till it becomes crisp in medium flame on both sides.
  4. Remove it and place it in a tissue paper to drain the excess oil
  5. Serve it hot with coconut chutney,sambar or ketchup.
My Tip: *The batter should be thick else they will drink lot of oil. *If the batter has become thin then add little maida. *The batter should be rest atleast 3 hrs ,so that will make goli baje light and fluffy else they will be little chewy and hard.
