ABOUT Chickpea Curry with Puffed Breads / Poori Chhole RECIPE

Poori Chhole is a popular north Indian street food which we have eaten a lot during our childhood.

Ingredients Serving: 6

  1. 500 gms Chickpea
  2. 1 tsp Salt
  3. 1/2 tsp Red chilli powder
  4. 1/2 tsp Turmeric powder
  5. 1/2 tsp Cumin Seeds
  6. 1/2 tsp Amchoor Powder
  7. 1 inch Ginger julienes
  8. 2 Green chillies (slit lengthwise)
  9. 2 Onions (sliced)
  10. 2 Tomatoes (chopped)
  11. 2 tbsp Oil
  12. Dry masalas to be ground into fine powder: 4-5 Dry Red Chillies
  13. 2 tsp cumin seeds
  14. 2 Bay leaves
  15. 2-3 cloves
  16. 2 Black Cardamom
  17. 1 tsp Black Pepper corns
  18. For the Poori dough:
  19. Whole wheat flour 2 cups
  20. Water 1 cup
  21. A pinch of salt
  22. 1/4 tsp Carom seeds (ajwain)

Instructions

  1. Dry roast all the masalas in a pan. Cool it and grind it into a fine powder.
  2. Soak chickpeas overnight or for at least 8 hours.
  3. Drain and then pressure cook the chickpeas with a little salt and 8 cups of water for half an hour.
  4. In a thick bottomed vessel, heat oil.
  5. Add cumin seeds, sliced onions and cook till it is golden brown in color.
  6. Add tomatoes and cook till the oil separates.
  7. Add in red chilli powder, turmeric powder and chickpeas.
  8. Now add ginger julienes, slit green chillies, Amchoor and roasted and ground dry masala powder.
  9. Cook on a slow flame for around 15 minutes and garnish with chopped coriander leaves and ginger julienes.
  10. Serve with Poori or Bhature.
  11. For making the pooris: Take a shallow bottom vessel. Add Wheat flour in it and add rest of the ingredients. Knead it into a dough.
  12. Refrigerate it for half an hour.
  13. Divide it in small balls and roll them into medium size. Deep fry them in hot oil.
