Ingredients to make Jalebi

  • Refined flour (maida) 1 1/2 cups
  • Pure ghee/oil for frying
  • Sugar 2 cup
  • Milk 1 tablespoon
  • Green cardamom powder 1/2 teaspoon
  • Saffron strands (optional)
  • Water 2 cup for syrup + 1 1/2 cup for batter

How to make Jalebi

  1. In a big bowl, add maida and water. Using a hand beater, whisk the batter for 20-30 minutes till it become smooth. Keep in a warm place to ferment overnight.
  2. Next day beat the batter again for 5-10 minutes.
  3. Using water and sugar make one string consistency syrup. Add milk while boiling and clean the syrup by removing the scum using a spoon or a ladle.
  4. Add green cardamom powder and a few saffron strands for flavor. Keep the sugar syrup warm.
  5. Transfer the batter in a squeezy bottle or a ziploc bag or cloth using to prepare the Jalebi. Heat oil or ghee on medium heat to fry the jalebis.
  6. Make a spiral shape and fry the jalebi from both sides till it becomes golden and crisp. Dip in the warm sugar syrup and serve hot.
My Tip: Sugar syrup should be lukewarm.
