Jackfruit is a wonder fruit. When ripe it is so juicy,.in green, it is very tasty and delicious curry . Difficult to deshell and cut, but once prepared, I am sure, it will be liked vegetable mutton.

Ingredients Serving: 6

  1. Raw jackfruit- 2 cups ( peel, cut and boiled)
  2. Potato - 1 nos ( cube)
  3. Chopped onion - 1 cup
  4. Chopped tomato - 1/2 cup
  5. Ginger garlic paste- 1 tbsp
  6. Cumin powder - 1 tsp
  7. Coriander pwd - 1 1/2 tsp
  8. Chilly pwd - 1/2 tbsp
  9. Turmeric pwd - 1 tsp
  10. Garam masala pwd - 1 tsp
  11. Ghee - 2tbsp
  12. Cumin seeds - 1/2 tsp
  13. Whole red chilly - 2 nos
  14. Bay leaves- 2 nos
  15. Sugar - 1/2 tbsp
  16. Salt as per taste

Instructions

  1. Cut and boiled the jackfruit and drain the water.
  2. Heat oil and deep fry potato and take out from oil.
  3. Add whole spices into same oil.
  4. Add chopped onion after spices crackle and fry the onion till brown.
  5. Mix all masalas into ginger garlic paste except garam masala and mix well. Pour into fried onion.
  6. Add tomato and continue to cook till oil separated from the side.
  7. Now add boiled jackfruit and fried potato and cook for 2 -.3 minutes, Add sugar and salt.
  8. Add hot water and another 5 minutes to cook.
  9. Before switch off the gas add ghee and garam masala
