Ingredients to make Lemon Fig Cake (Butter free)

  • 1 and ½ cup all purpose flour
  • 1 cup chopped figs
  • ¾ cup powdered sugar
  • ½ cup milk
  • 1/3 cup olive oil
  • 1 egg
  • 1 and ½ teaspoon grated lemon zest
  • 1 and ½ teaspoon lemon juice
  • ½ teaspoon baking powder
  • 1/4 teaspoon salt

How to make Lemon Fig Cake (Butter free)

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease and dust one 8 inch cake pan, and line the bottom of the pan.
  3. Stir together the ingredients, all purpose flour, baking powder and salt in a bowl.
  4. Take another large bowl and blend together the oil, milk, and beaten egg. Add the lemon juice to this mixture.
  5. Add the dry ingredients to the wet ingredients. Make sure not to over mix.
  6. Gently fold in the chopped figs and lemon zest.
  7. Carefully pour the batter in the prepared cake pan.
  8. Bake for 35 to 40 minutes or until the top turns golden and a skewer inserted in the center comes out clean.
  9. Remove from the oven and keep in the pan for 15 minutes. After this time period, remove the cake from the pan and place it on the wire rack to cool.
  10. Cut into even pieces and serve.
