Kerala Chicken Curry

Ingredients to make Kerala Chicken Curry

  • 500 gram chicken (cleaned and cut into small pieces)
  • 4 onions (medium size, thinly sliced)
  • 3 teaspoon ginger garlic paste
  • 2 green chillies
  • 1/2 teaspoon mustard seeds
  • 1/2 cup coconut (bite size pieces)
  • 2 Cardamom pods
  • 4 cloves
  • 2 inch piece of cinnamon
  • 2 teaspoon chilly powder
  • 3 teaspoon coriander powder
  • 1 teaspoon fennel powder
  • 1/2 teaspoon pepper powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 2 stalks of curry leaves
  • Salt to taste
  • 1 1/2 cup water
  • 3 - 4 tablespoon coconut oil

How to make Kerala Chicken Curry

  1. Heat oil in a pan and splutter mustard seeds. Add cardamom, cloves and cinnamon and saute till they start to brown. Add coconut pieces and fry till they turn golden brown.
  2. Add onions, curry leaves and green chillies and saute till onions start to brown. Add ginger garlic paste and saute for 2-3 minutes.
  3. Lower the flame and add the chicken pieces along with chilly powder, coriander powder, fenugreek powder, fennel powder, garam masala and salt. Saute the chicken pieces for a couple of minutes so that it gets coated with the masala.
  4. Lastly, add water and cover and cook till the chicken is done. Serve hot with rice.
