ABOUT Banana-choco marble loaf cake RECIPE

Rice flour based cake. The banana cake is made with the combination of rice flour and wheat flour. The eggs and banana added to the cake gives a very good texture. The desiccated coconut and coconut oil gives nice aroma to the cake. The recipe credit goes to sapna. From her recipe i avoided few ingredients and replaced few as to my convenience.

Ingredients Serving: 6

  1. Rice flour 3/4 cup
  2. Wheat flour 1/4 cup
  3. Desiccated coconut 1/4 cup
  4. Baking powder 3/4 teaspoon
  5. Baking soda 1/4 teaspoon
  6. Salt 1/4 teaspoon
  7. Cocoa powder 1 tablespoon
  8. Demerara sugar 1/2 cup
  9. Coconut oil 1/4 cup
  10. Eggs 2
  11. Banana big 2
  12. Warm milk 1/4 cup
  13. Hot water 3 tablespoon
  14. Vanilla essence 1 teaspoon

Instructions

  1. Grease and line a loaf tin.
  2. Pre heat the oven to 180 degree centigrade for 10 minutes.
  3. Sieve together wheat flour, rice flour, baking powder, baking soda 3 to 4 times.
  4. To the flour mixture add in the desiccated coconut, salt and whisk it.
  5. Mash the bananas and keep it ready.
  6. In another bowl add the eggs.
  7. Beat the eggs until they are double in volume for almost 8 minutes.
  8. Add the vanilla essence, sugar and beat for 2 more minutes.
  9. Now add in the coconut oil, mashed banana and continue to beat.
  10. Add the flour mixture and warm milk in batches and mix them gently without any lumps.
  11. Now take small bowl add cocoa powder, hot water and mix them well without any lumps.
  12. To this cocoa mixture add 3 tablespoon of cake batter and mix them. Keep it aside.
  13. Now take the greased loaf tin.
  14. Add the plain cake batter first.
  15. Tap the tin on the counter to remove air bubbles.
  16. Now add the cocoa mixture on top of plain batter and make swirls with a toothpick.
  17. Bake it in oven at 180 degree centigrade for 35 minutes or until toothpick inserted comes out clean.
  18. Remove from the tin.
  19. Cool it completely before slicing.
