Ingredients to make Rocky Road Ice cream Cake

  • For crust-2 packs Digestive biscuits
  • 100gms Butter, softened
  • For filling- 1 brick Chocolate Ice cream
  • 1/2 pack Digestive biscuits
  • 1/2 cup Chocolate chips
  • For topping-1 cup Miniature marshmallows
  • 1/2 cup Chocolate chips
  • 1/2 cup Butterscotch chips
  • Hersheys Chocolate syrup to drizzle over

How to make Rocky Road Ice cream Cake

  1. For crust-Crush digestive biscuits in a blender. Transfer to a large bowl. Add in the butter and mix well.
  2. Press this mixture onto the bottom and sides of a spring form pan.Press down firmly with a spoon.
  3. Bake crust at 350 degree F for 10 minutes. Cool completely and keep refrigerated till needed.
  4. For filling- Break or chop digestive biscuits into pieces. Combine Ice cream, biscuit pieces and chocolate chips. Spoon mixture over the crust. Cover with cling film and freeze for a minimum of 5-6 hours or overnight.
  5. For final assembly- Remove the cake carefully from the spring form pan onto a cake stand. Just before serving sprinkle the marshmallows, chocolate chips and butterscotch chips on top. Drizzle lots of chocolate syrup and serve.
My Tip: You can add nuts of choice for a crunch!
