Ingredients to make Walnut Coffee Gateaux

  • Ingredients: 140 gms walnuts
  • 150 gms sugar
  • 5 eggs separated
  • 55 gms brown breadcrumbs ( dry)
  • 2 tbsp cocoa powder
  • 2 tbsps honey
  • 1/8 tsp salt

How to make Walnut Coffee Gateaux

  1. Method: Preheat the oven to 180 degrees Celsius. Grease a cake tin ( preferably 9X2 inches).
  2. Grind the nuts with 3 tbsps of sugar in a food processor/blender.
  3. Beat the egg yolks, one at a time, with the remaining sugar in another container.
  4. Fold in the ground walnuts. Stir in the breadcrumbs, cocoa, rum and coffee.
  5. In another bowl, beat the egg whites with the salt until they make stiff peaks. Use a rubber scraper to fold this into the walnut mixture.
  6. Pour this batter into the prepared cake tin and bake till the top of the cake springs back, for about 45-50 mins. Let it stand for 5 mins and then turn out and cool it on the rack.
My Tip: I made it as is as well as tried a kid-friendly version too by replacing rum with honey and coffee with cocoa powder. You can make your own variations to the flavours of course. What struck me about it was that it doesn't contain any flour, butter or milk and yet had an intense depth of flavour and moistness that comes from eggs and surprisingly - breadcrumbs !
