ABOUT Sweet Potato Pithe/Sweet Potato Dumplings stuffed with coconut and jaggery RECIPE

Sweet potato pithe also known as Ranga Alur Puli Pithe in Bengali is a traditional Bengali festive dessert made of sweet potato. The mashed sweet potato are made into dumplings stuffed with coconut and jaggery mixture and deep fried then dipped in sugar jaggery syrup and serve as a dessert.

Ingredients Serving: 4

  1. 300 gms Sweet Potatoes
  2. 2 tbsps All purpose flour
  3. 2 tbsps rice flour
  4. Water as required for cooking the sweet potato
  5. Oil for deep frying
  6. For Stuffing:
  7. ½ cup grated coconut 
  8. ¼ cup Jaggery powder 
  9. For Syrup:
  10. ½ cup Sugar
  11. ½ cup Jaggery powder
  12. 2 cardamom pods
  13. 1½ cup water

Instructions

  1. In a pot add water, sweet potatoes and cook till the sweet potatoes are cooked well and soft. Peel and mash the sweet potatoes. Keep aside.
  2. In a pan add the grated coconut and jaggery powder and cook till the jaggery melts and the mixture becomes thick. Remove and keep aside to cool down. 
  3. In a mixing bowl add the mashed sweet potato, all purpose flour, rice flour and make a smooth soft dough. The dough should not be sticky.
  4. Divide the dough into 8-9 equal balls. Roll them in your palms and flatten them with your greased hand.
  5. Take a portion of the coconut jaggery mixture and place it in the center and carefully fold it to form a semi circular shape and seal the edges.
  6. Make ready the remaining balls in the same process and keep aside.
  7. To make the Syrup, add all the syrup ingredients in a pot and bring to boil. Once the jaggery and sugar dissolves completely add the cardomom and boil for about 8-10 mins. Take off the flame and let the Syrup stay warm.
  8. For deep frying the dumplings, heat oil in a pan. Add the dumplings in batches and fry on medium heat till golden and brown. 
  9. Remove from oil and drop the fried dumplings in the Syrup and let it soak for about 5 mins.
  10. You can serve it after completely cooling down or can serve warm too.
