Ingredients to make Eggless Coca-Cola Cake

  • 1 cup - all purpose flour/Maida
  • 1 cup - Coca cola (1/3 of the 300 ml bottle)
  • 1/3 cup - buttermilk
  • 1/3 cup - Unsalted butter
  • 1/3 cup - oil
  • 3/4 cup - Castor sugar (Fine grain white sugar will also do)
  • 3 tbsp - Good quality Cocoa
  • 1 tsp - baking soda
  • 1 tsp - Baking powder
  • 1/2 tsp - salt
  • Filling: buttercream/Nutella/Whipped cream

How to make Eggless Coca-Cola Cake

  1. Line cake mould with butter paper and preheat your oven at 180C.
  2. Combine and sift baking powder, baking soda, salt, cocoa powder and all-purpose flour. Whisk in sugar.
  3. Take a small pan and add oil along with butter. Heat until butter melts. Leave this cool for 5-7 minutes.
  4. Using a spatula make a well in the dry ingredients and pour oil-butter along with buttermilk. Gently mix, don’t combine to form dough.
  5. Pour in coca cola, stir until well combined. Add this thin batter to pre-arranged cake mould and bake for 20-25 mins or until skewer runs clean when tested in the centre.
  6. Cake will come down a bit upon cooling. Gently handle the cake as it is very soft.
  7. Top the cake with Nutella or anything of your choice and serve with love.

My Tip:

It is best to not slice the cake in two to add the filling. Just add a nice thin layer of nutella on the top and it should be enough.
