Ingredients to make Jamaican Shrimp in a creamy curry sauce

  • 500gm Shrimp, peeled and deveined
  • 1 Onion, minced
  • 4-5 garlic cloves, minced
  • 200ml fresh cream
  • 1/2 cup chicken stock
  • Fresh coriander leaves- a bunch
  • 2 tbsp Curry powder
  • Salt to taste
  • Fresh Green chillies/jalapenos- minced, as desired
  • a drizzle of olive oil

How to make Jamaican Shrimp in a creamy curry sauce

  1. Heat a pan and drizzle in the oil.
  2. Add in the onion, garlic and chillies. Saute for a minute till fragrant.
  3. Add curry powder and roast for a bit, now add in the cream and stock. Stir well to get a creamy curry.
  4. Just before you are ready to serve, add in the cleaned shrimp to the curry.Cook the shrimps only for 10-15 minutes else they will become hard and rubbery.
  5. Season and serve garnished with fresh coriander.
My Tip: Serve with freshly boiled rice and lemon wedges.
