ABOUT Sweet Potato in Jaggery Syrup RECIPE

Sweet Potato in Jaggery Syrup is a Sindhi recipe made during vrat/fast. This recipe can also be made with sugar . This recipe is cooked in a jiffy with minimum ingredients. Sweet potatoes are rich in an antioxidant beta carotene. They also contain a good amount of fibre, vitamin A, vitamin C, manganese and several other vitamins and minerals. You can adjust the sweetness according to your taste

Ingredients Serving: 4

  1. Sweet potatoes 2 -3 medium size (around 400 gram)
  2. Jaggery grated (1/2 cup) 80gram
  3. Ghee 2 tablespoon
  4. Water 2 cups
  5. Cardamoms 5 to 6 crushed
  6. Saffron strands 5 to 6

Instructions

  1. Scrape/peel the sweet potatoes and rinse nicely
  2. Cut roundels of medium thickness around 4mm to 5 mm. Cover and keep aside
  3. Heat ghee . Add crushed cardamoms.
  4. Now add the sweet potato roundels and saute for 2 minutes
  5. Then add water. Let it simmer.
  6. Once the sweet potatoes are half cooked in aroubd 5 to 7 minutes, add the jaggery and saffron.
  7. Simmer on low flame till done.
  8. Serve warm
