About Sweet Potato in Jaggery Syrup Recipe

Sweet Potato in Jaggery Syrup is a Sindhi recipe made during vrat/fast. This recipe can also be made with sugar . This recipe is cooked in a jiffy with minimum ingredients. Sweet potatoes are rich in an antioxidant beta carotene. They also contain a good amount of fibre, vitamin A, vitamin C, manganese and several other vitamins and minerals. You can adjust the sweetness according to your taste

Sweet Potato in Jaggery Syrup

Ingredients to make Sweet Potato in Jaggery Syrup

  • Sweet potatoes 2 -3 medium size (around 400 gram)
  • jaggery grated (1/2 cup) 80gram
  • ghee 2 tablespoon
  • water 2 cups
  • cardamoms 5 to 6 crushed
  • saffron strands 5 to 6

How to make Sweet Potato in Jaggery Syrup

  1. Scrape/peel the sweet potatoes and rinse nicely
  2. Cut roundels of medium thickness around 4mm to 5 mm. Cover and keep aside
  3. Heat ghee . Add crushed cardamoms.
  4. Now add the sweet potato roundels and saute for 2 minutes
  5. Then add water. Let it simmer.
  6. Once the sweet potatoes are half cooked in aroubd 5 to 7 minutes, add the jaggery and saffron.
  7. Simmer on low flame till done.
  8. Serve warm

My Tip:

Do not expose to air the peel raw sweet potatoes. Instead immerse them in water .
