It is really a finger lickings recipe.A baked eggplant stuffed with poha,cooked rice, chicken .coated with mouth watering tomato puree, flavour full garlic,thyme leaves,lamon juice.it goes parfect with chapati,plain rice,bread or plain polav rice.or u can have it with out any thing.

Ingredients to make Poha-rice Loaded eggplant boat

  • Large eggplant. 1
  • Oil/ butter. 1 tbs
  • Shredded garlic. 1/2 tbs
  • onion 1/3 cup
  • chicken cubes. 1/4 cup
  • Oregano. 1/3 tsp
  • red chilli powder. 1/2 tsp
  • Chopped tomatoes. 1/4 cup
  • Black pepper powder. 1/2 tsp
  • Shredded carrots. 3 tbs
  • Scooped eggplant
  • tomato puree. 3 tbs
  • salt 1/2 tsp
  • Lamon juice. 1tbs
  • Shredded green chilli. 1 tsp
  • Thyme leaves. 2 tbs
  • ginger. 1 tsp
  • Flatten rice/ poha. 1/4 cup
  • Cooked rice. 2 tbs
  • Foil paper
  • Sufficient salt to make pan oven

How to make Poha-rice Loaded eggplant boat

  1. CUT AN EGGPLANT LENGTHWISE WITH STEM.
  2. SCOOPING INNER PORTION MAKE EGGPLANT BOAT.KEEP THE SIDE A LITTLE THICKER.
  3. SOAK 1/2 CUP FLATTEN RICE/POHA IN WATER.
  4. WASH THOROUGHLY,RINS & KEEP ASIDE.
  5. ADD 1 TBS OIL/ BUTTER IN A PAN .
  6. ADD 1/2 TBS SHREDDED GARLIC.
  7. WHEN GARLIC GETS BROWN ADD 1/3 CUP ONION.
  8. ADD 1/4 CUP CHICKEN CUBES.
  9. ADD 1/3 TSP OREGANO.
  10. 1/2 TSP RED CHILLI POWDER.
  11. ADD 1/4 CUP CHOPPED TOMATO.
  12. ADD 1/2 TSP BLACK PEPPER POWDER.
  13. ADD 3 TBS SHREDDED CARROTS.
  14. ADD SCOOPED EGGPLANTS.
  15. ADD 3 TBS TOMATO PUREE.
  16. ADD 1/2 TSP SALT.
  17. ADD 1 TBS LAMON JUICE.
  18. ADD 1 TSP SHREDDED GREEN CHILLI.
  19. ADD 1 TSP SHREDDED GINGER.
  20. ADD 2 TBS THYMES.
  21. ADD 1/4 CUP FLATTEN RICE/ POHA.
  22. ADD 2 TBS COOKED RICE.
  23. MIX VERY WELL.
  24. COOKED IT FOR 5 MINUTES IN COVERED.
  25. RED POHA RICE IS READY.
  26. ADD 1 EGG PUTTING DOWN RICE FROM HEAT.
  27. MIX VERY WELL.
  28. BRUSH OIL ON THE EGGPLANT BOAT.
  29. LOAD EGGPLANT BOAT WITH RICE FILLING.
  30. SPREAD EVENLY.
  31. IN A PAN SPREAD THICK LAYER OF SALT.
  32. SET A STAINLESS STEEL STAND.
  33. WRAPE THE LOADED EGGPLANT WITH FOIL PAPER.
  34. SET ON PREPARED PAN OVEN.
  35. COVER WITH LID& BAKE IN MEDIUM- LOW FLAME FOR 30 MINUTES.
  36. POHA- RICE LOADED EGGPLANT BOAT IS READY!!
  37. UNWRAP IT.
  38. PLACE EGGPLANT IN SERVING PLATE, GARNISH WITH CURVED VEGS.
  39. SERVE WITH POACHED EGG.
  40. CAN GARNISH WITH POACHED EGGS FLOWER ALSO.
  41. ENJOY THE YUMMIEST POHA- RICE EGG PLANT.
