  • Fine semolina 2 tbsp
  • A pinch of Baking Soda
  • Desi ghee 1 cup
  • Powdered sugar 1 cup
  • Green cardamom powder 1 tsp

How to make Nan Khatai

  1. Preheat the oven to 180 degrees.
  2. In a large bowl, mix in refined flour, gram flour, semolina, cardamom powder and soda.
  3. Cream together the ghee and sugar until it is well blended.
  4. Add the flour mixture to the ghee mixture and knead them together to make a smooth dough. Put this mixture in the fridge for about 1 hour.
  5. Remove the dough from the fridge and make small size balls, press each ball between your palms lightly.
  6. With a sharp knife draw a tic-tac design on the top and put in chopped pistachios, press them into the dough gently.
  7. Put these balls on a greased baking tray and bake at 180 degrees for 12 to 15 minutes or until the nan khatai are lightly golden brown in colour.
  8. Serve them warm for best taste.
My Tip: You can add some vanilla essence as well.
