Mushroom Fried Rice

Ingredients to make Mushroom Fried Rice

  • 100 gms button mushrooms (sliced)
  • 1 cup spring onions (thinly sliced)
  • 1 tbsp garlic (finely chopped)
  • 1 tsp ginger (finely chopped)
  • 2 tbsp oil
  • 3 cups boiled rice
  • 2 tbsp soya sauce
  • 1 pinch of sugar
  • 1 tsp vinegar
  • Salt to taste

How to make Mushroom Fried Rice

  1. Heat oil. Add the ginger and garlic and saute for a minute. Add the spring onions and saute.
  2. Then add the sliced mushrooms and saute. The mushrooms will start leaving water, saute and cook till the water dries up.
  3. Add the soya sauce, sugar, vinegar and salt. Mix it well. Add in the boiled rice and mix well.
  4. Garnish with chopped spring onion greens and serve it hot.
My Tip: Boiled and shredded chicken on egg can be added while sauteeing the mushrooms to make non-veg fried rice.
