About CARROT KOLLUKATTAI. Recipe

Kollukattais are south Indian delicacy made with a twist of adding fresh carrot puree. Onions, dried chillies and shredded coconut are added to enhance the flavor of carrot kollukattais.

CARROT KOLLUKATTAI.

Ingredients to make CARROT KOLLUKATTAI.

  • carrot puree 1/2 cup
  • Rice flour 1 cup
  • semolina 1/4 cup
  • salt 1 teaspoon
  • oil 1/2 teaspoon
  • water 1/2 cup
  • Fir frying
  • onion 1
  • mustard seed 1 teaspoon
  • Bengal gram 1 teaspoon
  • Dried chillies 3
  • asafoetida 1/4 teaspoon
  • coconut (shredded) 1/4 cup
  • curry leaves, 2 sprigs
  • oil 2 teaspoon
  • salt to taste

How to make CARROT KOLLUKATTAI.

  1. INGREDIENTS FOR CARROT KOLUKKATTAI. (SOUTH INDIAN DELICACY WITH A TWIST)
  2. BOIL WATER AND ADD SALT AND A TEASPOON OIL.
  3. IN A BOWL ADD RICE FLOUR AND SEMOLINA.
  4. ADD SALT AND MIX WELL.
  5. ADD RAW CARROT PUREE BLENDED IN A MIXER TO THE FLOUR MIXTURE.
  6. MIX WELL.
  7. ADD LITTLE BOILING WATER TO THE CARROT FLOUR MIXTURE.
  8. MIX WELL AND LET IT REST.
  9. INGREDIENTS FOR FRYING.
  10. HEAT OIL ON A MEDIUM FLAME. ADD MUSTARD SEEDS AND BENGAL GRAM AND LET IT SPLUTTER.
  11. ADD ONION AND SAUTE WELL.
  12. ADD DRIED CHILLIES AND CURRY LEAVES TO IT.SAUTE FOR FEW MINUTES TILL ONIONS ARE TRANSPARENT.
  13. ADD 1/4 TEASPOON OF ASAFOETIDA AND MIX WELL.
  14. SWITCH OFF FLAME AND ADD SHREDDED COCONUT AND MIX WELL.
  15. ADD THE ONION MIXTURE TO THE CARROT FLOUR MIXTURE AND MIX WELL.
  16. ADD SALT TO TASTE.
  17. MIX WELL TILL SALT COMBINES WELL TO THE FLOUR MIXTURE.
  18. GREASE IDLI PLATES WITH OIL. MAKE SMALL BALLS OUT OF THE CARROT FLOUR MIXTURE.
  19. ARRANGE EVENLY ON A IDLI PLATE.
  20. STEAM CARROT KOLLUKATTAIS ON A IDLI PAN FOR 15 MINUTES.
  21. BEAUTIFUL ORANGY CARROT KOLLUKATTAIS ARE READY TO CONSUME.
