Ingredients Serving: 10

  1. For base:
  2. Sweet potato orange 2 medium ones
  3. Sweet potato yellow 2 small ones
  4. Ghee 1/4 cup
  5. Milk 1/4 cup
  6. Cane Sugar 1/4 cup
  7. Vanilla extract 1 teaspoon
  8. Salt , water to boil sweet potatoes
  9. Topping:
  10. Cane sugar 1/4 cup
  11. All purpose flour 1/2 cup
  12. Ghee 1/8 cup
  13. Choped Almonds, pista - handful

Instructions

  1. Take two coloured potatoes and cut them into cubes. I have taken 2 medium orange coloured and 2 small yellow coloured ones.
  2. Boil them with little salt. Meanwhile preheat oven to 170°C.
  3. Once it's cooked. Mash the yellow and orange ones separately and keep.
  4. In a bowl mix cane sugar,ghee, milk and vanilla extract to the orange coloured mashed sweet potatoes.
  5. Mix them well . This forms the base for the dish.
  6. In a greased oven friendly bowl spread the orange coloured mixture flat
  7. Above that spread the yellow coloured mashed sweet potatoes
  8. Collect the ingredients for topping
  9. Combine them together in a bowl
  10. Now crumble them over the filling
  11. Bake at 170° C for 20-25 mins.
  12. Double coloured sweet potato casserole is ready
  13. Serve hot
