Ingredients to make Majjiga Pulusu- White Pumpkin Buttermilk Pulusu

  • Sour Curd- 1 cup
  • White pumpkin cubes- 2 cups
  • Coconut - 1 tbsp
  • Besan or chickpea flour - 2 tbsp
  • Rice Flour - 1/2 tbsp
  • Whole Dhania or dhania powder - 1 tsp
  • Green Chillies - 1 or 2
  • Turmeric powder- a pinch
  • Salt to taste
  • Coriander leaves for garnishing
  • Seasoning Ingredients: Mustard, Curry leaves, Hing, Methi, Red chilli pieces

How to make Majjiga Pulusu- White Pumpkin Buttermilk Pulusu

  1. In a small mixer, blend the green chillies, coconut, dhania, rice flour, chana flour and turmeric. Add a little curd and blend.
  2. Then pour in a little water and whisk the remaining curds.
  3. In a kadai add oil. Make the seasoning with mustard, red chilli, methi seeds, curry leaves and hing.
  4. Add the white pumpkin cubes, salt and sufficient water. Cook till the vegetables are done.
  5. Next, add the ground masala, whisked curd and sufficient water. Stir while cooking. It will start gaining a yellow colour and thicken. Bring it to a boil.
  6. Top it with finely chopped coriander.

My Tip:

The curds should be slightly sour. The curry tends to thicken after cooling. Bacchalu koora can also be added. The second picture is a unique dish made with cut dosas like in the Majjiga Attu recipe. In the masalas to be grounded, jeera and red chilli are used instead of ginger, green chilli and coconut.
