For the chocolate tart
113 grams of butter, room temperature
1/2 cup plus 1 tablespoon confectioners' sugar
1 large egg yolk
3/4 teaspoon pure vanilla extract
1 1/4 cups all-purpose flour, plus more for rolling
1/4 cup cocoa powder
For the orange curd
4 oranges, at room temperature
1 1/2 cups sugar
100 grams butter
4 Eggs
1/2 cup fresh orange juice
1/8 tsp salt
1 tblsp orange zest
For the chocolate sauce
50 grams chocolate
100 ml cream
2 tsp honey
Pomegranates to decorate
Orange peel to decorate
Instructions
Make the tart dough first. Sift together cocoa, icing sugar and flour together. Cut in the butter and vanilla. Mix until the flour mixture resembles bread crumbs.
Add in the egg yolk and bring the dough together. Wrap in dough in cling wrap and chill for 20 minute.
Roll into a tart tin and bake for 30 minutes at 180 degree centigrade. Keep aside to cool.
While the dough is chilling, make your orange curd. In a bowl mix together the sugar and the orange zest. Use your fingertips to really bring the flavor out of the orange zest into the sugar.
In a large bowl cream the sugar and butter together. Add in the eggs one at a time and pour in the juice
Put this mixture onto a double boiler. Cook for 10 minutes or until the mixture has started to thicken and the eggs are cooked through. Strain and chill.
Make the chocolate sauce next. In a saucepan add the cream and the chocolate and honey. Whisk until smooth.
When you are ready to serve, assemble the tart. Pour in the orange curd into the tart shell. Drizzle chocolate sauce over it. Sprinkle a bit of salt and additional zest and finally top with pomegranates
