ABOUT Baked Chicken Meatballs in Spicy Orange Sauce RECIPE

This extra moist meatballs are baked and then tossed in a sweet, tangy and spicy glaze. These baked meatballs taste awesome on its own and is a great healthy option. I am sure you guys are gonna love this sweet, spicy and tangy meatballs. I had come across this recipe at Kelly Senyei's- Just a Taste site few months back. As oranges were in the season, I wanted to try them right away. Enjoy!

Ingredients Serving: 3

  1. For the Meatballs:
  2. 500 grams minced chicken
  3. 2 cloves garlic, minced
  4. 2 teaspoons ginger, minced
  5. 2 tablespoons spring onion, finely chopped
  6. 1/4 cup milk
  7. 1/4 cup panko breadcrumbs
  8. 2 tablespoons soy sauce
  9. 2 red chillies, finely chopped
  10. 1/4 teaspoon salt
  11. 1/4 teaspoon black pepper
  12. For the Sauce:
  13. 2 tablespoons olive oil
  14. 3 cloves Garlic, minced
  15. 1 teaspoon Ginger, minced
  16. 2 teaspoons crushed Red Chili Flakes
  17. 1 and 1/4 cup Orange Juice, freshly squeezed
  18. 1/4 cup sugar
  19. 1/4 cup Hoisin Sauce

Instructions

  1. To prepare the meatballs, preheat the oven to 260 degrees celsius. Spray a mini-muffin pan or baking dish with cooking spray.
  2. In a small bowl, stir together the milk and panko breadcrumbs and let it sit for 5 minutes.
  3. In a large bowl, combine the ground chicken, garlic, ginger, spring onions, soy sauce, chili, salt, pepper and soaked breadcrumbs. Use your hands to thoroughly combine the meat mixture.
  4. Shape it into balls using 2 to 3 tablespoons of meat per meatball. Place the shaped meatballs into the prepared pan and bake it for 12 to 15 minutes or until the meatballs are fully cooked.
  5. While the meatballs are baking, prepare the sauce.
  6. To prepare the sauce, in a sauce pan, take the orange juice and sugar. Stir in a low flame until the sugar has dissolved. Now turn the heat to medium-high and let it cook for 5-8 mins until the juice has concentrated and reduced to half.
  7. Add olive oil to a small saucepan over medium-low heat. Then add the garlic and ginger and cook, stirring, for about 2 minutes until it turns golden brown.
  8. Add the red pepper flakes, concentrated orange juice and hoisin sauce. Cook, while stirring occasionally for 5 minutes until the sauce has thickened slightly.
  9. Remove the meatballs from the oven and transfer them into a large bowl. Pour the sauce on top and toss to coat.
  10. Serve them hot immediately with some fried rice.
