Spongy Honey cake

Ingredients to make Spongy Honey cake

  • all purpose flour 1 cup
  • 3 eggs
  • Powdered sugar 1/2 cup
  • Baking powder 1 tsp
  • vinegar 1 TSP
  • oil 1/4 cup
  • Milk 1/2 cup
  • Vanilla extract 1 tsp
  • Fresh dry coconut crumbs [as required]
  • honey 2 TSP
  • Mixed fruit jam 2 TSP
  • water 1/4 cup
  • Chopped almonds and cashews [as required]

How to make Spongy Honey cake

  1. BEAT 3 EGG WHITES IN ELECTRIC BEATER
  2. ADD 1 TSP VINEGAR WHILE BEATING
  3. ADD POWDERED SUGAR LITTLE BY LITTLE
  4. BEAT WHITES TILL STIFF PEAK
  5. TAKE OIL 1/4 CUP, MILK 1/2 CUP AND VANILLA EXTRACT 1 TSP, YOAKS 3
  6. ADD OIL, VANILLA EXTRACT AND MILK INTO THE YOLK.
  7. BEAT IT
  8. TAKE 1 CUP APF AND 1 SPOON BAKING POWDER
  9. SEIVE THE DRY INGREDIENTS IN TO THE MIXTURE
  10. MIX IT BY CUT AND FOLD METHOD
  11. ITS DONE
  12. NOW ADD BEATED EGG WHITES LITTLE BY LITTLE AND MIX IT BY CUT AND FOLD METHOD GENTLY
  13. CAKE BATTER READY
  14. GREASE THE BAKING TIN
  15. POUR THE BATTER
  16. TAP IT GENTLY TO REMOVE THE BUBBLES
  17. NOW PRE HEAT OVEN AT 150°
  18. NOW PLACE THE BATTER AND SET FOR 40 MIN
  19. NOW PREPARE HONEY SUGER SYRUP... 2 TSP SUGER AND 1/4 CUP WATER
  20. START HEATING IT
  21. THIS IS THE CONSISTENCY SWITCH OFF
  22. NOW ADD 1 TSP HONEY AND MIX IT WELL
  23. NOW PREPARE HONEY FRUIT JAM .. 2 TSP MIXED FRUIT JAM AND 1 TSP HONEY
  24. HEAT IT TILL IT BECOMES GEL
  25. NOW SPONGE CAKE READY .. DE MOULD IT
  26. FLUFFY SPONGEE
  27. POKE IT WITH TOOTH PICK
  28. NOW APPLY HONEY SUGER SYRUP ALL OVER THE CAKE
  29. NOW APPLY HONEY MIXED FRUIT JAM ON IT
  30. SPRINKLE FRESH DRY COCONUT CRUMBS ALL OVER THE CAKE
  31. SPRINKLE SOME CHOPPED ALMONDS AND CASHEWS ON IT
  32. HONEY CAKE READY .. ENJOY
