Ingredients to make Strawberry flavored Almond Teabread

  • Eggs 2
  • All-purpose flour 1 cup
  • Castor sugar 3/4 cup
  • Sunflower oil 1/2 cup
  • Almonds 15-20
  • Strawberry compote 3 tbsp
  • Baking Powder 1 Tsp
  • Baking soda 1/4 tsp

How to make Strawberry flavored Almond Teabread

  1. Sieve flour with baking soda and baking powder
  2. Beat eggs and sugar.
  3. Add egg mixture in flour, mix well.
  4. Fold in almonds and strawberry compote.
  5. Pour the contents in a baking dish and bake in a preheated oven at 180° for 40 min.or till skewer comes clean

My Tip:

Strawberry compote. Cut the strawberries in quarters , and put in a pan with the sugar and lemon juice. Heat gently until the sugar dissolves, then bring to a simmer. Cover the pan and cook the strawberries for 3 mins or until dark red and syrupy. Cool, then add the balsamic vinegar, if using. The compote can be stored in the fridge for up to 2 weeks.
