About Coconut Rice Recipe

A mix of fresh coconut and spices gives this recipe a beautiful twist

Coconut Rice

Ingredients to make Coconut Rice

  • Basmati rice – 1 cup
  • Fresh coconut – 3 cups (grated)
  • ghee – 2 tbsp
  • onions – 2 (finely sliced)
  • cloves – 2 to 3
  • cinnamon – 1” stick
  • Green cardamom – 2 to 3
  • turmeric – 2 tsp
  • sugar – 1 tsp
  • salt – as per taste
  • cashew nuts (split) – 10 to 12

How to make Coconut Rice

  1. Wash and soak rice in lukewarm water for 20 to 30 minutes.
  2. Blend coconut with 3 cups warm water and express the coconut milk.
  3. Fry some sliced onions till golden crispy.
  4. In a pan, heat ghee and sauté for a few minutes. Add salt, sugar and turmeric. Add coconut milk (2 ½ cups approx) and cover & simmer until rice is cooked
  5. Serve hot garnished with fried onions.
