Ingredients Serving: 6

  1. For Handva Flour:
  2. Rice – 1 cup
  3. Red split gram – ½ cup (masur dhuli)
  4. Yellow split gram – ½ cup (chana dal)
  5. Wheat – 4 tbsp
  6. Bengal Gram – 2 tbsp (chickpea)
  7. White split gram – 2 tbsp (urad dhuli)
  8. Semolina – 2 tbsp
  9. Sour Yoghurt – 1 ½ cup
  10. Bottle Gourd (grated) or Corn Kernels or Cabbage (chopped) – 2 cups
  11. Oil – as required
  12. Sugar – 1 tbsp
  13. Ginger Chilli Paste – 2 tsp
  14. Garlic Pods Whole – 4 to 5 (optimal)
  15. Soda Bicarbonate – 2 tsp
  16. Peanuts – ½ cup
  17. Asafoetida – 2 tsp
  18. Salt as per taste
  19. For Tempering:
  20. oil
  21. Mustard Seeds – 1 tsp
  22. Sesame Seeds – 1 tbsp
  23. Round Red Chillies – 3 to 4
  24. Asafoetida – a pinch (hing)
  25. Curry Leaves – 4 to 5

Instructions

  1. Grind all the dals to make a flour. Soak handva flour mixture with sour yoghurt and soda overnight.
  2. Grease a medium sized baking dish with a little oil. Preheat the oven to 150ᵒC.
  3. When the batter is fermented, add choice of vegetable, salt, ginger-chilli paste, sugar, asafoetida, and two tbsp of oil and soda bicarbonate and mix it with little water.
  4. Mix the batter very lightly and pour it into a greased baking dish. Take a pan, heat 4 tbsp oil, add mustard, peanuts and sesame seeds. When they splutter, add asafoetida, red chillies and curry leaves.
  5. Pour the tempering over the Handva batter and bake it in a preheated oven for 30 – 35 minutes until it forms a golden crust and knife comes out clean.
  6. Remove from oven and cool. Cut into squares and serve with green chutney or sweet-sour pickle.
