Chicken Pulao

Ingredients to make Chicken Pulao

  • 1 cup Basmati Rice
  • 300 - 350 gms Chicken
  • 1 Big Potato
  • 1 Onion (Sliced)
  • 1 tbsp ginger garlic paste
  • 1 big tomato (sliced)
  • handful of chopped mint and coriander
  • 3 - 4 Green chillis
  • 2 - 3 tbsp Oil
  • 1/2 tsp fennel seeds
  • 3 Green Cardamom
  • 1 black cardamom
  • 3-4 cloves
  • 1 Cinnamom stick
  • 1 bay leaf

How to make Chicken Pulao

  1. Heat oil in a pressure cooker, and once hot add all the whole spices and fennel seeds. After a minute add Ginger Garlic paste and the sliced onions and saute till onions becomes soft and translucent.
  2. Throw in the potato chunks and sliced green chillis and saute them as well.
  3. Add washed chicken pieces and saute everything together till the chicken becomes white and opaque.
  4. Then add the sliced tomatoes , mint and coriander and give a mix. Add little turmeric powder and garam masala and salt as needed. Pour 2 cups water and let it come to a boil.
  5. Add rice, give a mix, close and cook for 1 whistle only (as basmati rice cooks really fast).
  6. Let the pressure release on its own. Open the lid and fluff gently with a fork. Squeeze lemon juice and serve hot.

My Tip:

Instead of adding sliced green chillis, you can also grind chillis, ginger, garlic, fennel and cloves to a paste with water and add like I do always with most pulaos. Adding tomatoes are optional. Add water accordingly as chicken also releases water when cooking. This can be just made in a heavy bottomed pot also instead of cooker.
