Chicken Scotch Eggs

Ingredients to make Chicken Scotch Eggs

  • 3 eggs
  • 2 chicken breasts
  • 1 small onion
  • 1 tsp dried herbs
  • salt as needed
  • pepper as needed
  • 1 tsp paprika (or mild red chilli powder)
  • 2 - 3 tbsp plain flour
  • 1 egg beaten
  • 1/4 cup Bread crumbs
  • oil to deep fry

How to make Chicken Scotch Eggs

  1. Boil the eggs for 8 - 10 minutes and then remove their shells. Blitz the chicken breast with chopped onions, herbs.
  2. Add salt, pepper, dried herbs, paprika and garlic powder and give a nice mix. Beat one egg and keep ready in a bowl. Also keep 2 - 3 tbsp flour in a bowl and breadcrumbs in a plate. First roll the eggs in the flour.
  3. Then take a handful of the chicken mince and spread it on a foil / plate like a pattie. Then keep the egg in the middle and cover the egg completely with the chicken mince
  4. The chicken mixture may be sticky. Rub your hands with oil when doing this. Then roll it gently in the flour. Repeat the same for the other two eggs also.
  5. Now dip it in the beaten egg and then coat it with breadcrumbs. Place them carefully in hot oil and allow them to cook.
  6. Keep rotating the eggs so that they are evenly browned and cooked from inside. Remove on a paper towel.

My Tip:

You can use any meat in place of chicken, like beef or pork mince or sausages. For a simple version or eggetarians, use mashed boiled potatoes with little spices of your choice and cover the eggs and fry them. Fry in medium heat rotating them often so that they are cooked properly from inside. Otherwise the outer part will be browned quickly leaving raw chicken inside. Serve with any sauce of your choice, tomato, sweet chilli or mayo. To make indian version of this, use chilli powder, coriander powder, garam masala etc in the chicken mince :)
