Mediterranean style mutton leg roast

ABOUT Mediterranean style mutton leg roast RECIPE

A tangy one pot meal which is eaten with the bread that cooks along with the mutton and is used to cover the dish while cooking.

Ingredients Serving: 4

  1. Mutton leg-one kg
  2. Hung curd-200gms
  3. Olive oil - 5-6 spoons
  4. Potatoes four small
  5. Tomatoes-2
  6. Olives-a handful
  7. Dried herbs-thyme and oregano (one spoon)
  8. Paprika-one spoon
  9. Rind of one lime
  10. Sugar-1/2 spoon
  11. Salt-to taste
  12. Maida-about two cups
  13. Yeast 1/2 spoon
  14. Warm water to knead the dough
  15. Sugar and salt to taste

Instructions

  1. Mix 1/2 spoon sugar ,yeast and warm water and let it rise.Make a dough using salt to taste with the yeast water and let it rest. Marinate the mutton leg with yoghurt and salt for at least one hour.Pressure cook the mutton with two whistles
  2. In a ceramic bowl put together the half cooked mutton along with the juices, potatoes,tomatoes and olives.
  3. Warm the olive oil.Put a spoon ful of chopped garlic and herbs.
  4. Pour this over the mutton and sprinkle the rind on it.Add salt and sugar to taste.
  5. Flatten the dough using hour hand and cover the bowl with it sealing the sides.
  6. Make a few cuts on the dough to let the steam pass through.
  7. Preheat the oven at high and cook this on convection for 45 mins.
