Kalmi Kebab

Ingredients to make Kalmi Kebab

  • Chicken Leg Piece -4
  • Melted Butter -1/4 Cup
  • Onion Slice - To garnish
  • Part - I :
  • Salt - 3/4 Tspn
  • Lemon Juice - 1 1/2 Tbspn
  • Red Chilli Pdr - 1 Tspn
  • Part - II :
  • Mustard Oil - 1 tbpn+1tspn
  • Thick curd -1/4 Cup
  • Ginger Garlic Paste - 1 tbpn + 1tspn
  • Kasuri methi - 1 Tbspn
  • Mint Leaves -12 (Finley minced)
  • Finely minced coriander leaves -2 tbspn
  • Red Chilli Pdr - 1 Tspn
  • Kashmiri chilli pdr - 2 tspn
  • Garam Masala pdr - 1/2 tspn
  • Jeera pdr - 3/4 tspn
  • Salt - to taste

How to make Kalmi Kebab

  1. *Wash the chicken several time.Pat dry them and make insertion using a knife on both sides.
  2. *Marinate the chicken with PART -I ingredients and keep it aside for 15-20 mins.
  3. *In another bowl mix the PART -II ingredients.Check salt and spices.Apply this paste to the chicken on both sides and keep covered with a lid refrigerate overnight.
  4. Next day take out marinated chicken and bring to it room temperature.Preheat the oven at 270 °C.Prepare a baking tin and line with a foil.
  5. Place the marinated chicken pieces leaving space b/w them.First bake for 20 mins in bake mode and flip it in between and then turn into rotisserie/grill mode for 15 mins.Flip in between to cook.
  6. Apply the butter on cooked chicken and serve with onion rings and lemon wedges.

My Tip:

Overnight marination makes the chicken more tastier and juicy.If u dont have time then marinate it atleast 3 hrs.U can also serve it as astarter with mint chutney.
