Ingredients Serving: 4

  1. Grated Lauki 1 and half cup
  2. 1 cup besan
  3. 1 cup wheat aata
  4. Half cup jawar aata

Instructions

  1. TAKE 1 AND A HALF CUP GRATED LAUKI. TAKE 1 CUP BESAN,1 CUP WHEAT AATA, AND HALF CUP JAWAR AATA
  2. GREEN CHILLIES:2, HALF A LEMON. HALDI, RED CHILLI POWDER, SALT, COOKING SODA, JEERA, CHOPPED DHANIYA
  3. ADD ALL THE AATA TO THE GRATED LAUKI. DO NOT ADD ANY WATER IN THIS.
  4. NOW, ADD THE CHOPPED GREEN CHILLIES, AND CHOPPED DHANIYA TO THE MULTIGRAIN LAUKI MIXTURE.
  5. ADD SALT AS PER TASTE, JEERA AND RED CHILLI POWDER.
  6. ADD HALDI AND A TEASPOON OF HING.
  7. ADD COOKING SODA.
  8. ADD 2 TABLESPOON OF VEGETABLE OIL. YOU CAN ALSO USE GHEE, IF YOU WANT.
  9. SQUEEZE A LEMON TO THE MUTHIYA MIXTURE.
  10. MIX ALL THE INGREDIENTS.
  11. DO NOT ADD WATER. THE MIXTURE WILL COME TOGETHER DUE TO THE WATER IN LAUKI.
  12. WE ARE USING AN IDLI STEAMER. KEEP IT ON HIGH FLAME.
  13. GREASE THE IDLI STAND. YOU CAN ALSO GREASE A CONTAINER IF YOU WANT.
  14. TAKE SOME OIL IN YOUR HAND, ROLL THE DOUGH INTO SMALL PARTS AND PLACE IT ON THE STAND.
  15. THEY WOULD LOOK LIKE SMALL TIKKIS.
  16. NOW PLACE IT IN THE STEAMER, AND STEAM THE MUTHIYAS.
  17. STEAM IT FOR 15 TO 20 MINUTES.
  18. MEANWHILE, PREPARE THE TADKA. TAKE TWO TABLESPOON VEGETABLE OIL AND LET IT HEAT.
  19. ADD A TABLESPOON OF MUSTARD SEEDS AND JEERA.
  20. LET THE MUSTARD AND JEERA SPLUTTER.
  21. ADD TWO TABLESPOONS OF WHITE TIL AND LET IT SPLUTTER.
  22. DO THE TOOTHPICK/KNIFE TEST AND CHECK IF THE MUTHIYAS ARE COOKED.
  23. NOW CUT THEM IN BIG CHUNKS.
  24. ADD IT TO THE PREPARED TADKA.
  25. KEEP IT ON MEDIUM FLAME FOR 2 TO 3 MINS, YOUR MULTIGRAIN LAUKI MUTHIYAS ARE READY TO BE SERVED.
