Adhirasam

Ingredients to make Adhirasam

  • Raw rice 1/2 cup
  • jaggery 1/2 cup
  • water 1/4 cup
  • Pinch of dry ginger
  • Pinch of cardamon powder

How to make Adhirasam

  1. SOAK 1/2 CUP RAW RICE FOR 2 HOURS AND STRAIN WATER
  2. SPREAD RICE IN DRY CLOTH AND PAT THEM GENTLY TO REMOVE WATER
  3. ADD IT TO BLENDER AND GRIND TO FINE POWDER
  4. RICE FLOUR SHOULD HAVE CONSISTENCY AS SHOWN
  5. BOIL 1/2 CUP JAGGERY WITH 1/4 CUP WATER. PREPARE JAGGERY SYRUP
  6. STRAIN IMPURITIES
  7. ADD PINCH OF DRY GINGER POWDER AND CARDAMON POWDER
  8. DROP JAGGERY SYRUP IN WATER AND IT SHOULDN'T DISSOLVE AS SHOWN
  9. MIX JAGGERY SYRUP WITH RICE FLOUR. GREASE YOUR HAND WITH GHEE. KNEAD DOUGH
  10. DOUGH SHOULD BE NON STICKY. COVER WITH A CLOTH AND REST IT FOR 2 HRS OR MIN 30 MINS
  11. SHAPE SMALL PORTIONS
  12. FLATTEN THE PORTIONS
  13. DEEP FRY THEM. IT SHOULD PUFF. COOK ON BOTH SIDES ON LOW FLAME
  14. WHEN COLOR CHANGES TO GOLDEN BROWN, PRESS WITH ANOTHER SPATULA TO REMOVE EXCESS OIL

My Tip:

Rest th dough for 1-2 hours for best results
